Seasoned Mushrooms and Peas

This is a fun recipe, with easily available ingredients. It's also a one pot meal because I truly dislike doing dishes. I usually serve this over rice or another gluten free grain like quinoa or amaranth.
12 oz of cremini mushrooms, sliced
6 cloves of garlic, sliced
1 bunch of scallions, sliced
16 oz of frozen peas, thawed
1/2 cup of sunflower seeds
Salt & pepper
-Heat olive in a large pan over a medium high flame. When the oil begins to shimmer, add in the garlic and the sunflower seeds.
- When garlic is fragrant and seeds have been toasted, add in the onions and mushrooms. Cook until the mushrooms have reduced to half of their original size.
-Add in the peas when the mushrooms have finished cooking, keep on the heat until fully warmed through and well seasoned with salt pepper and olive oil.
I recently had to cook for a big family gathering. I was dealing several allergies and restrictive diets. About dozen people, paleo, vegetarian, gluten free, I was starting to freak out a little. However I stuck to some classic staples to make this easy one pot meal. I will say if i were cooking on a less restrictive diet i would of course use pine nuts or slivered almonds instead of sunflower seeds. I would also add in some poached shrimp but alas there was a deadly fish allergy. I hope enough people find some joy in this simply yummy weeknight meal.
