Gluten Free Peach Cobbler
This is a great Springtime recipe. Best if using fresh peaches, but for our purposes canned peaches work just as well.

Ingredients:
Filling : 2 (29 oz) cans of peaches with 1 cup of the syrup reserved and split (1/4 cup + 3/4 cup)
2 teaspoons of cinnamon
2 teaspoons of ground cloves
Pinch of nutmeg
Dash of sea salt
1 tablespoon of cornstarch
Batter : 1 cup of sugar
1 cup of All purpose GF flour
1 3/4 teaspoon baking powder
1/2 teaspoon of salt
1 Large egg
6 tablespoons of coconut oil
2 tablespoons of milk 1/2 teaspoon of vanilla
Topping: 2 tablespoons of brown sugar
Method:
Heat oven to 350°F/176°C and grease a casserole dish or deep baking dish.
Drain peaches reserving 1 cup of heavy syrup.
Mix peaches and filling ingredients together, pour in 3/4 cups of the peach syrup and mix thoroughly, then pour into your casserole dish.
In a small bowl mix together the dry ingredients of the batter.
Then incorporate the wet ingredients as well as the 1/4 cup of peach syrup.
Spoon the batter evenly over the top of the dish.
Sprinkle brown sugar over the top
Bake in the oven for 35 - 40 minutes or until the batter is golden brown.
Let cool for at least 20 minutes before serving, it will be piping hot!
I like eating this with a big dollop of freshly whipped cream although the lady of the house has always been a fan of eating hers with a scoop of ice cream. I really love this recipe, its a great thing to whip up in those cold spring mornings, it just fills your home with a peachy cinnamon smell.
